    Prepare Potatoes

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and cook until they are golden and tender, about 10 minutes. Season with salt and black pepper. Remove from skillet and set aside.

    Sauté Vegetables

    In the same skillet, add another tablespoon of olive oil. Add the diced onion and bell pepper, and sauté until they are soft, about 5 minutes.

    Scramble Eggs

    Whisk the eggs in a bowl and pour them into the skillet with the sautéed vegetables. Cook, stirring gently, until the eggs are just set.

    Combine Ingredients

    Add the cooked potatoes and tortilla strips to the skillet. Pour in the El Paso style red sauce and stir everything together gently until well combined and heated through.

    Serve

    Serve the migas hot, topped with a dollop of sour cream.
