Cooking Directions

  1. 1

    Marinate the Flank Steak

In a bowl, combine olive oil, lime juice, chili powder, cumin, garlic powder, salt, and black pepper. Add the flank steak, ensuring it is well coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

  2. 2

    Prepare the Vegetables

Slice the red and green bell peppers and the onion into thin strips. Set aside.

  3. 3

    Preheat the Grill

Preheat your grill to medium-high heat. If using mesquite wood chips, soak them in water for about 30 minutes before using them on the grill for extra smokiness.

  4. 4

    Grill the Steak

Remove the flank steak from the marinade and let any excess drip off. Place the steak on the grill and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from the grill and let it rest for 5 minutes.

  5. 5

    Grill the Vegetables

While the steak is resting, place the sliced vegetables on the grill. Grill for about 3-4 minutes, turning occasionally, until they are tender and slightly charred.

  6. 6

    Slice and Serve

Slice the rested flank steak against the grain into thin strips. Serve the steak and grilled vegetables in warm tortillas, garnished with fresh cilantro, sour cream, and pico de gallo.
