Preparation
1. Prepare the Protein
Cook your choice of protein (chicken, beef, or tofu) until fully cooked. Season with salt and pepper to taste, then set aside.
2. Prepare the Beans
Heat the refried beans in a small saucepan over medium heat until warmed through. Stir occasionally.
3. Melt the Cheese
In a large oven-safe dish, spread the tortilla chips evenly. Layer the heated refried beans over the chips, followed by the cheddar and Monterey Jack cheese. Place under the broiler until the cheese is melted and bubbly, about 2-4 minutes.
4. Add Toppings
Once the cheese is melted, remove from the oven and top with sliced fresh jalapeños and your choice of cooked protein.
5. Serve
Serve with a generous scoop of homemade guacamole and sour cream on the side. Enjoy immediately!
