    Prepare the Beef Filling

    In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent. Add ground beef, salt, and pepper. Cook until browned and fully cooked. Drain excess fat.

    Assemble the Enchilada

    Preheat the oven to 350°F (175°C). Take one corn tortilla, fill it with a portion of the beef mixture and a sprinkle of shredded cheese. Roll it up and place it seam-side down in a baking dish. Repeat with the second tortilla.

    Add Sauce and Cheese

    Pour enchilada sauce over the rolled tortillas in the baking dish. Sprinkle remaining shredded cheese on top.

    Bake

    Bake in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.

    Serve

    Serve the enchilada with a side of cooked rice and refried beans. Garnish with chopped cilantro if desired.
