    In a skillet, heat olive oil over medium heat. Add brunch potatoes, season with salt and pepper, and cook until golden and crispy, about 10-15 minutes. Set aside.

    In the same skillet, crack eggs and cook over easy until the whites are set but the yolks are still runny, about 3-4 minutes. Remove from heat.

    Assemble the Dish

    On each corn sope, layer a spoonful of refried beans, followed by the cooked eggs. Top with ranchero salsa and sprinkle with Cotija cheese.
