This dish is served with Mexican butter and all the fixings.

Carefully butterfly each jumbo shrimp without cutting all the way through. Stuff each shrimp with Monterey Jack cheese and diced jalapeños. Wrap each shrimp with a slice of bacon and secure with a toothpick.

Prepare the Shrimp

Preheat a grill to medium-high heat. Grill the bacon-wrapped shrimp for about 4-5 minutes on each side, or until the bacon is crispy and the shrimp are cooked through.

Season the steak and chicken with your favorite spices. Grill both over medium-high heat until cooked to your desired doneness, approximately 6-8 minutes per side for the steak and 5-7 minutes per side for the chicken.

While the meats are grilling, slice the bell peppers and onion. In a skillet, sauté them in a little oil until they are soft and slightly caramelized.
