Grilling and Assembly

    Prepare the Vegetables

    Slice the zucchini, yellow squash, mushrooms, bell peppers, and onion into strips.

    Marinate

    In a large bowl, combine the sliced vegetables with olive oil, salt, pepper, and any desired spices. Let marinate for at least 30 minutes.

    Grill the Vegetables

    Preheat the grill to medium-high heat. Place the marinated vegetables on the grill and cook for about 5-7 minutes, turning occasionally, until tender and slightly charred.

    Prepare the Mexican Butter

    In a small bowl, mix softened butter with lime juice, chopped cilantro, and salt to taste.

    Warm the Tortillas

    Warm the homemade flour tortillas on the grill for about 30 seconds on each side until pliable.

    Assemble the Fajitas

    On each tortilla, layer the grilled vegetables, black beans, cilantro rice, guacamole, sour cream, and shredded cheese. Drizzle with the Mexican butter.
