    Prepare the Cauliflower

    Preheat the grill to medium-high heat. Cut the cauliflower into florets and toss with olive oil, cumin, salt, and pepper. Grill the cauliflower for about 10-15 minutes until tender and slightly charred, turning occasionally.

    Cook the Rice

    While the cauliflower is grilling, cook the rice according to package instructions. Once cooked, fluff with a fork and stir in chopped cilantro and lime juice.

    Roast Corn

    If using frozen corn, thaw it first. If using canned corn, simply drain it. Sauté corn in a skillet over medium heat for about 5-7 minutes until heated through and slightly caramelized.

    Sauté Peppers and Onions

    In the same skillet, add sliced bell pepper and onion. Sauté for about 5-7 minutes until they are soft and slightly caramelized.

    Prepare Avocado Escabeche

    Slice the avocados and drizzle with lime juice. Sprinkle with salt and set aside.

    Assemble the Bowl

    In a large bowl, layer the cilantro rice, grilled cauliflower, roasted corn, black beans, sautéed peppers and onions, avocado escabeche, pico de gallo, and queso fresco. Top with guacamole, crispy tortilla chips, and a drizzle of sour cream.
