Prepare the Ingredients
Thinly slice the filet mignon against the grain. Slice the bell peppers and red onion into strips.

Cook the Meat
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced filet mignon and season with fajita seasoning. Cook for about 5-7 minutes until browned and cooked to your desired level of doneness. Remove from the skillet and set aside.

Sauté the Vegetables
In the same skillet, add the remaining tablespoon of olive oil. Add the sliced bell peppers and red onion. Sauté until they are tender and slightly charred, about 5-6 minutes.

Combine and Serve
Return the cooked filet mignon to the skillet with the vegetables. Toss to combine and heat through. Serve with warm flour tortillas and agave queso sauce on the side.
