Prepare the Filet Mignon
Preheat the oven to 400°F (200°C). Season the filet mignon steaks with olive oil, salt, and black pepper on both sides.

Sear the Steaks
In an oven-safe skillet over medium-high heat, sear the steaks for about 3-4 minutes on each side until a golden-brown crust forms.

Finish in the Oven
Transfer the skillet to the preheated oven and cook for an additional 5-7 minutes for medium-rare or until desired doneness is reached.

Make the Agave Queso Sauce
In a saucepan over medium heat, combine cream cheese, shredded cheddar cheese, agave nectar, diced jalapeños, garlic powder, and a splash of water. Stir until smooth and creamy.

Serve
Remove steaks from the oven, let them rest for a few minutes. Serve with the agave queso sauce on the side, garnished with chopped cilantro.
