Cooking Instructions

  1. 1

    Prepare the Ingredients

Slice the red onion and bell peppers into thin strips. If using steak, chicken, and shrimp, cut them into bite-sized pieces for cooking.

  2. 2

    Marinate the Proteins

In a bowl, combine the shrimp, chicken, and steak with olive oil, lime juice, cumin, chili powder, salt, and pepper. Let it marinate for at least 15 minutes.

  3. 3

    Cook the Rice and Beans

Prepare the Mexican rice according to package instructions. Heat the canned beans in a small saucepan until warm.

  4. 4

    Sauté the Vegetables

In a large skillet over medium-high heat, add a bit of olive oil and sauté the red onions and bell peppers until they are tender and slightly charred, about 5-7 minutes. Remove and set aside.

  5. 5

    Cook the Proteins

In the same skillet, add a little more olive oil if necessary. Cook the marinated proteins for about 5-7 minutes, or until fully cooked through and slightly browned.

  6. 6

    Combine and Serve

Return the sautéed vegetables to the skillet with the cooked proteins. Mix well and let everything heat through. Serve on a sizzling-hot skillet with warm flour tortillas, Mexican rice, and beans on the side.
