    Prepare the Fajita Meat

    If not already cooked, grill the fajita meat over mesquite wood until fully cooked. Slice into strips and set aside.

    Sauté the Onions

    In a skillet, heat olive oil over medium heat. Add the sliced onion and sauté until soft and translucent, about 5 minutes. Season with salt and black pepper.

    Assemble the Quesadillas

    On one half of each flour tortilla, layer the sautéed onions, sliced fajita meat, and shredded Monterey Jack cheese. Fold the tortilla in half.

    Cook the Quesadillas

    In the same skillet, add a little more olive oil if needed and cook each quesadilla over medium heat until the tortillas are golden and crispy, about 3-4 minutes per side. Once done, remove from the skillet and let cool slightly.

    Serve

    Cut the quesadillas into wedges and serve with sour cream, fresh guacamole, and chopped cilantro on the side.
