    Prepare the Filling

    In a skillet over medium heat, sauté the chopped onion and minced garlic until translucent. Add the ground beef or shredded chicken, cumin, salt, and pepper. Cook until the meat is browned and fully cooked. Drain any excess fat.

    Assemble the Enchiladas

    Preheat the oven to 350°F (175°C). Spread a thin layer of enchilada sauce on the bottom of a baking dish. Take a tortilla, spoon some of the meat mixture and a sprinkle of cheese into the center, roll it up, and place seam side down in the baking dish. Repeat with remaining tortillas.

    Add Sauce and Cheese

    Pour the remaining enchilada sauce over the rolled tortillas and top with the remaining shredded cheese.

    Bake

    Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and slightly golden.

    Garnish and Serve

    Remove from the oven, garnish with fresh cilantro, and serve hot with chips and salsa on the side.
