Preparation
Prepare the filling
In a skillet, heat olive oil over medium heat. Add diced onions and sauté until translucent. For ground beef enchiladas, add ground beef to the skillet, season with cumin, chili powder, salt, and pepper, and cook until browned. For pulled chicken, simply mix the pulled chicken with some of the enchilada sauce. Set aside.
Prepare the tortillas
Warm corn tortillas in a dry skillet or microwave to make them pliable.
Assemble the enchiladas
Spoon about 1/4 cup of the filling (beef, chicken, or cheese & onion mixture) into each tortilla, roll tightly, and place seam side down in a greased baking dish.
Add sauce and cheese
Pour remaining enchilada sauce over the rolled tortillas and sprinkle shredded cheese on top.
Bake
Preheat the oven to 350°F (175°C). Bake the enchiladas for 20-25 minutes, or until the cheese is melted and bubbly.
Serve
Remove from the oven, garnish with fresh cilantro, and serve hot.
