Preparation

    Prepare the Shrimp

    In a skillet over medium-high heat, sauté shrimp in a little olive oil for about 3-4 minutes or until they turn pink and are cooked through. Season with salt and pepper.

    Make the Mango Habanero Sauce

    In a blender, combine mango puree, habanero pepper, lime juice, honey, and salt. Blend until smooth and adjust seasoning as needed.

    Prepare the Cilantro Rice

    In a saucepan, bring water to a boil. Add rice and reduce heat to low. Cover and simmer for 15 minutes or until rice is tender. Fluff with a fork and stir in chopped cilantro and lime juice.

    Prepare the Slaw

    In a bowl, combine shredded jicama, diced mango, diced red bell pepper, and pineapple. Toss with a bit of lime juice and salt.

    Assemble the Tacos

    Warm the corn tortillas in a dry skillet. Fill each tortilla with sautéed shrimp, mango-jicama slaw, and drizzle with mango habanero sauce. Serve with cilantro rice and black beans on the side.
