One crispy or soft sautéed chicken taco one ground taco, plus one ground beef enchilada, pulled chicken enchilada or & onion enchilada.

Prepare the Filling
In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent. Add ground chicken and ground beef, cooking until browned. Stir in taco seasoning, salt, and pepper. Cook for another 5 minutes and remove from heat.

Prepare the Enchiladas
Preheat oven to 375°F (190°C). Spread refried beans on the flour tortillas. Fill with the cooked chicken or beef mixture, roll them up, and place them seam-side down in a baking dish. Top with salsa and shredded cheese.

Bake the Enchiladas
Bake in the preheated oven for 20-25 minutes until cheese is melted and bubbly.

Prepare the Tacos
For the crispy taco, fry one corn tortilla in hot oil until crispy, then fill with the remaining chicken mixture, lettuce, diced tomatoes, and a dollop of sour cream. For the soft taco, simply fill another corn tortilla with the same ingredients.

Serve
Plate the crispy taco, soft taco, and baked enchiladas. Garnish with additional salsa, lettuce, tomatoes, and sour cream as desired.
