Prepare the Pork
Cut the pork shoulder into large chunks and season with salt, black pepper, cumin, and oregano.

Slow Cook the Pork
In a large pot, heat the lard over medium heat. Add the seasoned pork and sear on all sides until browned. Stir in the minced garlic, bay leaves, orange juice, and lime juice. Bring to a simmer.

Simmer
Cover the pot and reduce the heat to low. Let the pork cook for about 4-6 hours, or until the meat is tender and easily shreds.

Prepare the Tacos
Warm the corn tortillas in a dry skillet over medium heat. Fill each tortilla with the shredded carnitas and add your choice of toppings.
