Cooking Instructions

  1. 1

    Prepare the Carnitas

In a large pot, combine pork shoulder, salt, black pepper, garlic, and orange juice. Add enough water to cover the meat. Bring to a boil, then reduce heat to low, cover, and simmer for about 2 to 3 hours until the pork is tender and easily shreds.

  2. 2

    Shred the Pork

Once the pork is cooked, remove it from the pot and shred it using two forks. Heat a skillet over medium-high heat, add the shredded pork and cook until crispy, about 10 minutes.

  3. 3

    Sauté the Vegetables

In another skillet, melt the Mexican butter over medium heat. Add sliced bell peppers and onions, sautéing until soft and slightly caramelized, about 5-7 minutes.

  4. 4

    Warm the Tortillas

Warm the flour tortillas in a dry skillet for about 30 seconds on each side or until pliable.

  5. 5

    Assemble the Fajitas

On each tortilla, add a generous portion of carnitas, sautéed peppers and onions, and top with guacamole, sour cream, shredded cheese, and pico de gallo. Serve with Mexican rice and frijoles a la charra on the side.
