    Prepare the Ingredients

    Dice the onion, bell pepper, tomato, and potatoes into small pieces.

    Cook the Potatoes

    In a large skillet, add a bit of oil over medium heat. Add the diced potatoes and cook until they are golden and tender, about 10-12 minutes. Remove and set aside.

    Sauté the Vegetables

    In the same skillet, add the onion and bell pepper. Sauté until softened, about 5 minutes. Add the cooked potatoes back into the skillet.

    Scramble the Eggs

    In a bowl, whisk together the eggs with a pinch of salt and pepper. Pour into the skillet with the vegetables and scramble until the eggs are fully cooked.

    Assemble the Quesadillas

    On one half of each tortilla, place a portion of the egg and vegetable mixture, add diced tomatoes and top with cheddar cheese. Fold the tortillas in half.

    Cook the Quesadillas

    Wipe the skillet clean and return it to medium heat. Cook each quesadilla for 3-4 minutes on each side, or until golden brown and the cheese is melted.

    Cut the quesadillas into wedges and serve with guacamole, sour cream, and tomatillo sauce.
