Prepare the Barbacoa
If not using pre-cooked barbacoa, slow-cook the beef with spices until tender. Shred the beef and set aside.

Assemble the Quesadillas
Heat olive oil in a large skillet over medium heat. Place one tortilla in the skillet. On half of the tortilla, layer 1/2 cup of barbacoa beef, 1/4 cup of shredded cheese, and a sprinkle of salt and pepper. Fold the tortilla over to close.

Cook the Quesadilla
Cook the quesadilla for about 3-4 minutes on one side until golden brown and the cheese has melted. Carefully flip and cook for an additional 3-4 minutes on the other side.

Serve
Remove the quesadilla from the skillet and let it cool slightly. Cut into wedges and serve with sour cream, salsa, and chopped cilantro on the side.
