Prepare the Vegetables
Slice the bell peppers and onion into thin strips. Set aside.

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the sliced bell peppers and onion. Sauté for about 5-7 minutes until they are softened and slightly caramelized.

Add Barbacoa Beef
Add the cooked barbacoa beef to the skillet with the sautéed vegetables. Mix well to combine and heat through, about 3-5 minutes.

Warm the Tortillas
In a separate pan, warm the tortillas over medium heat for about 30 seconds on each side or until soft.

Serve
To serve, place a portion of the barbacoa beef and vegetable mixture on each tortilla. Garnish with fresh cilantro, a squeeze of lime, and season with salt and black pepper to taste.
