Prepare the Avocado Crema
In a blender, combine the avocado, sour cream, lime juice, and a pinch of salt. Blend until smooth and creamy. Set aside.

Prepare the Fish
In a large bowl, whisk together flour, cornstarch, baking powder, salt, black pepper, and cayenne pepper. Gradually add the cold beer or sparkling water, whisking until a smooth batter forms.

Heat the Oil
In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Fish
Dip each fish fillet into the batter, allowing excess to drip off. Carefully place in the hot oil and fry for 3-4 minutes per side, or until golden brown and cooked through. Remove and drain on paper towels.

Warm the Tortillas
While the fish is frying, heat the corn tortillas in a dry skillet over medium heat until warm and pliable.

Assemble the Tacos
To assemble, place a piece of fried fish on a tortilla, top with shredded cabbage, pico de gallo, and a drizzle of avocado crema. Garnish with chopped cilantro.
