Calamari Preparation

    Combine Dry Ingredients

    In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder until well combined.

    Prepare the Egg Mixture

    In another bowl, whisk together the eggs and milk until smooth.

    Heat the Oil

    In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Calamari

    Dip the calamari rings first in the egg mixture, allowing excess to drip off, then coat them thoroughly in the flour mixture.

    Fry the Calamari

    Carefully add the coated calamari rings to the hot oil in batches, frying for 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Marinara Sauce Preparation

    Sauté the Garlic

    In a saucepan, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

    Add Tomatoes and Seasonings

    Pour in the canned crushed tomatoes and add oregano, salt, black pepper, and sugar. Stir to combine.

    Simmer the Sauce

    Reduce heat to low and let the sauce simmer for 15-20 minutes, stirring occasionally. Add fresh basil just before serving.
