Hot Tea

    Boil water

    Bring 4 cups of fresh water to a rolling boil in a kettle or saucepan over high heat.

    Steep tea

    Place 2 tablespoons (or 2 tea bags) of black tea into a teapot or heatproof container. Pour the boiling water over the tea. Cover and steep for 3 to 5 minutes depending on desired strength (3 minutes for lighter, 5 minutes for stronger).

    Strain and season

    Remove tea bags or strain loose tea leaves. Stir in 2 teaspoons honey and 1 tablespoon lemon juice while hot so they dissolve. Add milk (1/4 cup) only if you prefer milky tea; stir to combine.

    Serve

    Ladle the hot tea into cups. Garnish with lemon slices and serve immediately.

Iced Tea (Cold)

    Boil water for brewing

    Bring 4 cups of water to a boil in a kettle or saucepan.

    Steep strong tea

    Place 4 tablespoons (or 4 tea bags) of black tea into a heatproof pitcher. Pour the boiling water over the tea, cover, and steep 5 to 7 minutes to make a stronger brew that won't become weak when iced.

    Sweeten and cool

    Remove tea bags or strain leaves. While the tea is still warm, stir in 3 teaspoons sugar (or 3 tablespoons simple syrup) and 2 tablespoons fresh lemon juice until dissolved. Let the tea cool at room temperature for 15–20 minutes.

    Chill and serve

    Fill glasses with ice (about 1/2 cup per glass) and pour the cooled tea over ice. Add extra lemon slices and mint leaves to each glass for garnish. Serve immediately or refrigerate the pitcher until cold.
