    Juicing

    Juice the lemons, oranges, and limes until you have the quantities listed. Strain the combined citrus juice through a fine mesh sieve into a pitcher to remove pulp and seeds for a smooth beverage (about 1–2 minutes).

    Muddle Mint

    Place the packed mint leaves in a small bowl or glass. Use a muddler or the back of a wooden spoon to gently bruise the leaves for about 20–30 seconds — you want to release the oils without shredding the mint. Add the muddled mint to the pitcher with the strained citrus juice.

    Add the cold water to the pitcher and stir to combine the citrus-mint mixture.

Sweetener & Flavoring

    Make Simple Syrup

    In a small heatproof cup, combine the granulated sugar and hot water. Stir until the sugar fully dissolves (about 30–45 seconds). If using honey for additional flavor, stir it into the warm syrup until incorporated. Let the sweetener cool slightly (1–2 minutes).

    Stir the warm sweetener and the vanilla extract into the citrus-mint pitcher. Taste and adjust: add up to 1–2 tablespoons more honey or sugar dissolved in a little warm water if you prefer sweeter.

Chill & Serve

    Chill briefly

    Cover the pitcher and refrigerate for at least 20 minutes to allow flavors to marry. If short on time, let rest at room temperature for 10 minutes.

    Assemble drinks

    Fill serving glasses with ice (about 1/2 cup ice per glass). Pour the citrus-mint base over the ice, filling each glass about two-thirds full. Top each glass with club soda or sparkling water to add effervescence (roughly 1/3 to 1/2 cup soda per glass). Gently stir once to combine.

    Garnish & finish

    Garnish each glass with a lemon slice, an orange wheel, and a mint sprig. Optionally, slap the mint sprig between your palms first to release aroma before placing it on the glass. Serve immediately.
