Mint Lemonade (Sparkling)

Make mint simple syrup
In a small heatproof bowl or jar, combine 1/2 cup granulated sugar and 1/4 cup hot water. Stir until sugar dissolves to make a concentrated syrup. Add 10 fresh mint leaves, lightly bruise them with a spoon to release oils, and steep for 10 minutes. Strain out mint and discard leaves; reserve syrup and remaining leaves.

Juice and assemble
In a pitcher, combine 1 cup fresh lemon juice, the cooled mint syrup, and the remaining bruised mint leaves. Add 2 cups cold sparkling water and stir gently. Add ice cubes and remaining 2 cups sparkling water to taste (to keep fizz, add slowly). Taste and adjust sweetness by adding more syrup if desired.

Prepare ginger concentrate
In a small saucepan, combine grated ginger and 2 tablespoons water. Bring to a simmer for 2 minutes, then remove from heat and let steep 5 minutes. Strain to collect ginger-infused liquid, pressing solids to extract juices.

Sweeten and mix
In a pitcher, whisk the honey (or agave) with the warm ginger liquid until dissolved. Add 2 cups fresh orange juice and 2 teaspoons fresh lime juice. Stir to combine and chill briefly in refrigerator (10–15 minutes) or pour over ice immediately.

To serve, fill glasses with ice, pour orange-ginger mixture until 2/3 full, then top with club soda or sparkling water (about 1/2 cup per glass). Stir gently and garnish with an orange wheel.

Make cucumber-basil base
In a blender, combine 1 cup peeled, chopped cucumber, 10 basil leaves, 1/4 cup fresh lime juice and 2 teaspoons simple syrup. Pulse until mostly smooth (10–15 seconds). If you prefer a very smooth drink, blend an extra 10 seconds.

Strain (optional)
Strain the puree through a fine mesh sieve into a pitcher to remove solids, using the back of a spoon to press out liquid. Discard solids or reserve for another use.

Add 2 cups cold water, stir to combine, add ice, and taste. Adjust sweetness or acidity with extra simple syrup or lime juice. Serve in glasses over ice and garnish with cucumber slices and a basil leaf.
Berry Iced Tea (Fruity)

Brew tea
Place 4 black tea bags in a heatproof pitcher. Pour 4 cups boiling water over the bags and steep 4–5 minutes for medium strength. Remove tea bags, squeezing gently, and allow tea to cool to warm room temperature.

Make berry mixture
In a small bowl, whisk 1/2 cup mixed berry puree with 2 tablespoons simple syrup and 2 teaspoons lemon juice until smooth. If puree is thick, thin with 1–2 tablespoons water.

Combine berry puree with cooled tea, add ice, and stir. Taste and adjust sweetness with more simple syrup if needed. Serve over ice with fresh berries as garnish.
