Prepare the Wagyu Coulotte
Remove the Wagyu coulotte from the refrigerator and let it sit at room temperature for about 30 minutes before cooking. Preheat your grill or skillet to high heat.

Prepare the Maitake Mushrooms
Clean the maitake mushrooms by gently brushing off any dirt. Tear them into smaller pieces for even cooking.

Prepare the Hollandaise Sauce
In a heatproof bowl, whisk together the egg yolks, lemon juice, salt, and white pepper until frothy. Set the bowl over a pot of simmering water, making sure the bowl does not touch the water.

Cook the Wagyu Coulotte
Sear the Wagyu coulotte on high heat for about 4-5 minutes on each side for medium-rare, or until the internal temperature reaches 130°F. Remove from the heat and let it rest for 10 minutes.

Sauté the Maitake Mushrooms
In a separate skillet, heat a tablespoon of clarified butter over medium heat. Add the maitake mushrooms and sauté for about 5-7 minutes until they're golden brown and tender. Season with salt to taste.

Plate the Dish
Slice the rested Wagyu coulotte against the grain. On a plate, arrange the sliced meat, add a portion of sautéed maitake mushrooms, and drizzle with the A5 hollandaise sauce. Serve immediately.
