Preparation

  1. 1

    Prepare the Tomatoes

Wash the tomatoes thoroughly under running water. Cut them into small cubes and place them in a large mixing bowl.

  2. 2

    Prepare the Pineapple

If using fresh pineapple, peel, core, and chop it into small pieces. If using canned pineapple, drain it well and cut into chunks. Add the pineapple to the mixing bowl with the tomatoes.

  3. 3

    Add Candied Jalapenos

Measure out the candied jalapenos and chop them into small pieces if they are whole. Add them to the mixing bowl with the tomatoes and pineapple.

Mixing

  1. 4

    Combine Ingredients

Gently fold the tomatoes, pineapple, and candied jalapenos together in the mixing bowl until well combined. Be careful not to mash the tomatoes.

  2. 5

    Taste and Adjust

Taste the mixture and add salt or additional candied jalapenos, if desired, to suit your taste.

Serving

  1. 6

    Serve

Transfer the mixture to a serving dish and serve immediately as a fresh salad or salsa, or refrigerate for 30 minutes to allow flavors to meld before serving.
