Preparation of Sushi Rice

Rinse the Rice
Place the sushi rice in a fine-mesh sieve and rinse it under cold water until the water runs clear. This removes excess starch.

Cook the Rice
In a rice cooker, combine the rinsed rice with 1.2 cups of water and cook according to the manufacturer's instructions.

Season the Rice
Once cooked, transfer the rice to a large bowl. Mix the mirin, rice vinegar, and salt together, then gently fold this mixture into the rice while it is still warm. Allow to cool to room temperature.
Preparing the Sea Urchin

Open the Sea Urchin
Carefully open the fresh sea urchin using scissors or a knife, ensuring not to damage the uni inside.

Extract the Uni
Use a small spoon to gently scoop out the uni, being careful to keep it intact.
Assembly

Prepare Nori Sheets
Cut the nori sheets into rectangles, approximately 3 inches by 4 inches.

Form Sushi
Moisten your hands with water to prevent sticking. Take a small amount of sushi rice (about 1 tablespoon) and form it into an oval shape. Place a piece of uni on top.

Serve
Place the finished sushi on a serving plate. Garnish with chives and microgreens. Serve with soy sauce and wasabi on the side.
