    Prepare Sea Urchins

    Carefully open the fresh sea urchins using a seafood knife. Make a clean cut around the top of the shell to expose the interior. Remove the gonads (uni) gently and place them in a bowl.

    Season the Sea Urchin

    Sprinkle the fresh sea urchin gonads with sea salt and set aside to marinate for about 5 minutes.

Prepare Ikura

    Marinate Ikura

    In a small bowl, combine the salmon roe (ikura), soy sauce, and mirin. Gently mix to coat the roe evenly and let it marinate for about 10 minutes.

Assembly

    Plate the Dish

    On a serving plate, arrange the marinated sea urchin gonads elegantly. Using a spoon, place small dollops of marinated ikura on top of the sea urchin.

    Garnish

    If desired, sprinkle chopped chives and lemon zest over the dish for added flavor and presentation.
