Prepare the Broth

Make the Tom Yum Broth
In a large pot, combine the Tom Yum paste, coconut milk, vegetable broth, lime juice, fish sauce, and brown sugar. Stir well to combine.

Simmer the Broth
Bring the mixture to a gentle simmer over medium heat. Allow it to simmer for about 10 minutes to develop the flavors.
Cook the Fish

Season Striped Bass
Pat the striped bass fillets dry with paper towels. Season both sides with salt and pepper to taste.

Add Fish to Broth
Carefully place the seasoned striped bass fillets into the simmering broth. Cook for about 5-7 minutes, or until the fish flakes easily with a fork.

Plate the Dish
In a shallow bowl, ladle the Tom Yum broth with the cooked striped bass. Top with sautéed maitake mushrooms.
