Method

Preparation of the Marinade

  1. 1

    Mix Marinade Ingredients

In a small bowl, combine olive oil, lemon juice, minced garlic, chopped dill, salt, and black pepper. Whisk until well blended.

Marinating the Fish

  1. 2

    Marinate the Striped Bass

Place the striped bass fillets in a shallow dish and pour the marinade over them. Ensure the fish is well coated. Cover and refrigerate for at least 30 minutes.

Preparing the Vegetables

  1. 3

    Prepare Asparagus and Tomatoes

While the fish marinates, preheat the grill or oven to medium-high heat. Toss the asparagus, cherry tomatoes, and sliced red onion with a drizzle of olive oil, salt, and pepper in a bowl.

Cooking

  1. 4

    Grill the Fish

Remove the striped bass from the marinade and place it on the grill or a baking sheet in the oven. Cook for about 4-5 minutes on each side or until the fish flakes easily with a fork.

  2. 5

    Grill the Vegetables

While the fish is cooking, grill the prepared asparagus, cherry tomatoes, and red onion until they are tender and slightly charred, about 5-7 minutes.

Serving

  1. 6

    Plate the Dish

Once the fish and vegetables are cooked, place the striped bass on a serving platter. Arrange the grilled vegetables around the fish.

  2. 7

    Garnish and Serve

Garnish the dish with lemon slices and fresh dill sprigs. Serve immediately.
