Base Preparation

    Brew Thai Tea

    In a medium saucepan, bring 4 cups of water to a boil. Add 2 cups of Thai tea leaves and steep for about 15 minutes.

    Sweeten the Tea

    After steeping, strain the tea leaves and return the liquid to the pan. Stir in 1 cup of sugar until completely dissolved. Allow it to cool.

    Add Coconut Milk

    Once cooled, mix in 1 cup of coconut milk, stirring until well combined. Set aside in the refrigerator to chill.

Tamarind Sauce Preparation

    Prepare Tamarind Sauce

    In a small saucepan, combine 1 cup of tamarind paste and 1 cup of water over medium heat. Stir until the tamarind paste is fully dissolved.

    Add Sweetness and Flavor

    Once dissolved, add 1 tablespoon of brown sugar and 1 teaspoon of salt. Bring to a gentle simmer and cook for about 5 minutes, stirring occasionally. Remove from heat and allow to cool.

Assembling the Sundae

    Prepare Mango

    Peel and dice 1 large mango into small cubes.

    Assemble the Sundae

    In a serving bowl or glass, layer the chilled Thai tea base, followed by a generous drizzle of tamarind sauce. Top with diced mango and a sprinkle of coconut flakes.

    Repeat the layers if desired, and enjoy your refreshing Thai tea sundae!
