    Prepare the Ahi Tuna

    Cut the fresh Ahi tuna into small cubes and set aside in a bowl.

    Prepare the Avocado

    Slice the avocado in half, remove the pit, and scoop out the flesh. Cut into thin slices and set aside.

    Make the Dipping Sauce

    In a small bowl, combine soy sauce and wasabi. Mix well to create a dipping sauce.

    Plate the Starter

    On a serving plate, arrange the diced tuna and avocado slices. Serve with pickled ginger on the side and the dipping sauce.

    Cook the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Cook according to package instructions, usually with a 1:1.2 rice-to-water ratio.

    Once the rice is cooked, transfer it to a bowl and gently mix in rice vinegar while the rice is still warm. Allow it to cool.

    Prepare the Salmon

    Season the salmon fillet with salt and pepper. Grill or pan-sear the salmon over medium heat until cooked through.

    On a bamboo mat, place a nori sheet. Spread an even layer of sushi rice over the nori, leaving a small border at the top. Place the salmon in the center and sprinkle with sesame seeds.
