Preparation of Soy Aioli

Make the Soy Aioli
In a mixing bowl, combine the mayonnaise, soy sauce, lemon juice, and minced garlic. Mix well until smooth and creamy. Adjust seasoning with salt and pepper to taste, then set aside.
Preparing the Crabs

Clean the Crabs
Rinse the softshell crabs under cold water and pat dry with paper towels. Remove the gills and any unwanted parts carefully.

Season the Crabs
In a shallow dish, combine the all-purpose flour, salt, and black pepper. Dredge each crab in the flour mixture, ensuring they are evenly coated.
Cooking the Crabs

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until it shimmers.

Fry the Crabs
Carefully add the coated crabs to the hot oil, frying them for about 3-4 minutes on each side, or until golden brown and crispy. Remove from the skillet and drain on paper towels.
Serving

Prepare to Serve
Slice the avocados and arrange them on a serving platter. Place the crispy softshell crabs on top of the avocado slices.

Sprinkle fresh cilantro over the crabs and serve with a side of soy aioli for dipping.
