Shrub Preparation

Prepare the Fruit
Wash and chop the seasonal fruit into small pieces. If using apples or peaches, remove the skins and pit (if applicable).

Make the Shrub
In a medium bowl, combine the chopped fruit and sugar. Stir until the sugar is fully incorporated and the fruit releases some juices, about 5-10 minutes.

Add Vinegar
Pour in the apple cider vinegar and mix well. Transfer the mixture to a clean jar and seal it. Let it sit in the refrigerator for at least 24 hours, preferably 3-5 days to develop the flavors.

Prepare the Glasses
Fill each glass with ice cubes, about halfway full.

Combine Ingredients
In a separate pitcher, mix the prepared shrub (start with 1-2 ounces per glass) with the dry vermouth. Adjust the amount of shrub based on your taste preference.
