Preparing the Scallops

    Season the Scallops

    Pat the sea scallops dry with a paper towel and season them with salt and black pepper.

    Heat olive oil in a skillet over medium-high heat until shimmering.

    Sear the Scallops

    Add the scallops to the skillet, ensuring they are spaced apart. Sear for about 2-3 minutes on each side until they are golden and opaque.

    Remove the scallops from the skillet and let them rest for a minute before serving.

Making Salsa Macha

    In a dry skillet over medium heat, toast the dried chiles until fragrant, about 1-2 minutes. Remove and let cool.

Making Fresno Aioli

    In a bowl, mix mayonnaise, finely chopped Fresno chili, minced garlic, and lemon juice until well combined.
