    Slice the Salmon Belly

    Using a sharp knife, slice the salmon belly into thin pieces, about 1 cm thick, and set aside.

    Prepare Marinade

    In a bowl, combine soy sauce, mirin, sake, and sugar. Stir until the sugar is dissolved.

Marinade and Cook

    Marinate the Salmon

    Place the sliced salmon belly into the marinade and let it sit for at least 30 minutes in the refrigerator.

    Cook the Salmon

    Heat a non-stick skillet over medium heat. Remove the salmon from the marinade, allowing excess marinade to drip off, and place it skin-side down in the skillet. Cook for about 2-3 minutes on each side until the skin is crispy and the flesh is tender.

Serving

    Garnish and Serve

    Finely chop the green onions. Once the salmon is cooked, transfer it to a serving plate. Sprinkle with chopped green onions and sesame seeds. Cut the nori sheets into strips and serve alongside.
