    Marinate the Salmon

    In a mixing bowl, combine sake, soy sauce, mirin, brown sugar, and sesame oil. Whisk until the sugar dissolves. Place the salmon fillets in the marinade, cover, and refrigerate for at least 30 minutes.

    Prepare the Peppers

    While the salmon is marinating, rinse the shishito and Thai chili peppers under cold water and pat them dry with a paper towel. Set aside.

Cooking

    Cook the Salmon

    Heat a non-stick skillet over medium-high heat. Remove the salmon from the marinade and place it in the skillet. Cook for about 4-5 minutes on each side until cooked through and slightly caramelized. Remove from the skillet and let rest.

    Sauté the Peppers

    In the same skillet, add a little more sesame oil if needed and add the shishito and Thai chili peppers. Sauté for about 3-4 minutes until they blister and become tender.

Serving

    Plate the Dish

    Slice the salmon fillet into pieces and arrange on a plate with the sautéed peppers. Garnish with chopped green onions and a sprinkle of sesame seeds before serving.
