    Prepare the Marinade

    In a medium-sized bowl, whisk together the sake, soy sauce, mirin, brown sugar, grated ginger, minced garlic, sesame oil, salt, and black pepper until the sugar is dissolved and well combined.

    Marinate the Salmon

    Place the Atlantic salmon fillets in a shallow dish or resealable plastic bag. Pour the marinade over the salmon, ensuring that each fillet is well-coated. Cover the dish or seal the bag and refrigerate for at least 30 minutes, or up to 2 hours for enhanced flavor.

    Preheat the Grill

    Preheat your grill to medium-high heat. If using a grill pan, heat it over medium heat and lightly oil the pan to prevent sticking.

    Grill the Salmon

    Remove the salmon from the marinade, allowing excess marinade to drip off. Discard the remaining marinade. Place the salmon fillets skin-side down on the grill. Cook for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

    Plate the Dish

    Once cooked, remove the salmon from the grill and let it rest for a minute. Serve on a plate, garnished with lemon wedges and chopped fresh cilantro on top.
