Preparation of Ingredients

    Prepare the Vegetables

    Rinse the broccolini and trim off the ends. Cut the mushrooms into bite-sized pieces.

    Prepare the Fish

    Rinse the seasonal white fish under cold water and pat dry. Cut the fish into fillets or chunks, as preferred.

Cooking the Broth

    Make the Tom Kha Broth

    In a large pot, combine the coconut milk and chicken or vegetable broth. Add the bruised lemongrass, sliced galangal, and torn kaffir lime leaves.

    Simmer the Broth

    Bring the mixture to a gentle simmer over medium heat. Allow it to cook for about 10 minutes to infuse the flavors.

    Season the Broth

    Add the fish sauce and lime juice to the broth. Stir well and adjust seasoning with more fish sauce or lime juice, if needed.

    Add the Fish and Vegetables

    Gently add the prepared seasonal white fish, mushrooms, and broccolini to the pot. Cook for an additional 5-7 minutes, until the fish is cooked through and the vegetables are tender.

Serving

    Garnish and Serve

    Remove the pot from heat. Stir in the chopped cilantro and sliced Thai chili. Serve the Sakana Mushi hot in bowls, garnished with additional cilantro if desired.
