Chimichurri Sauce

Prepare the Chimichurri Sauce

Grill the Leeks
Trim the root ends and the dark green tops off the leeks. Slice the leeks in half lengthwise and rinse thoroughly to remove any dirt. Once cleaned, brush the cut sides lightly with olive oil. Place the leeks cut side down on the grill and char for about 4-5 minutes, or until they are tender and have nice grill marks. Remove from the grill and let cool.

Chop the Leeks
Once the leeks are cool enough to handle, chop them into small pieces and add them to a mixing bowl.

Mix the Ingredients
To the bowl with the chopped leeks, add the chopped parsley, cilantro, minced garlic, red wine vinegar, red pepper flakes, salt, and black pepper. Stir well to combine.

Incorporate Olive Oil
Slowly drizzle in the olive oil while stirring to emulsify the sauce. Adjust seasoning with additional salt and black pepper to taste.
