Preparation

  1. 1

    Preparing the Tuna

Using a sharp knife, cut the bluefin tuna into small, even cubes. Aim for approximately 1/4 inch size for optimal texture.

  2. 2

    Chopping Shallots and Chives

Finely chop the shallot and chives. Make sure to use a gentle hand to avoid bruising.

  3. 3

    Preparing the Avocado

Cut the avocado in half, remove the pit, and scoop the flesh out. Dice the avocado into small cubes similar in size to the tuna.

Mixing

  1. 4

    Combine Ingredients

In a mixing bowl, gently combine the diced tuna, avocado, shallots, and chives. Be careful not to mash the avocado.

  2. 5

    Add Seasonings

Drizzle the soy sauce, sesame oil, and lime juice over the mixture. Season with salt and black pepper to taste. Gently mix to incorporate.

Serving

  1. 6

    Plating the Tartare

Using a ring mold or a small cup, pack the tartare mixture tightly to form a round shape on a plate.

  2. 7

    Garnish

Sprinkle sesame seeds over the tartare and top with radish microgreens for a fresh finish.

  3. 8

    Final Touch

Serve immediately to enjoy the freshness of the ingredients. Optionally, serve with tortilla chips or on cucumber slices.
