    Slice the Onions

    Peel the onions and cut them into 1/2-inch thick rings. Separate the rings and set aside.

    Prepare the Batter

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Mix well. Gradually add the cold water while whisking to create a smooth batter. Add the ice cubes to keep the batter cold.

Frying

    Heat the Oil

    In a deep fryer or a large heavy pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Onion Rings

    Dip each onion ring into the batter, ensuring it’s fully coated.

    Fry the Onion Rings

    Carefully place the coated onion rings in the hot oil, a few at a time. Fry until they are golden brown, about 2-3 minutes per side. Make sure not to overcrowd the pot.

    Drain the Onion Rings

    Using a slotted spoon, remove the fried onion rings and place them on a paper towel-lined plate to drain excess oil.

    Serve Hot

    Serve the onion ring tempura hot with your choice of dipping sauces, such as ranch or spicy mayo.
