Method

Course 1: Sashimi

    Prepare the Fish

    Thinly slice fresh tuna and salmon into sashimi pieces.

    Serve

    Arrange the sashimi on a plate, serve with a dab of wasabi and soy sauce on the side.

Course 2: Miso Soup

    Make the Soup

    In a pot, heat dashi stock until simmering. Add miso paste and whisk until dissolved.

    Add Tofu and Green Onions

    Dice tofu and thinly slice green onions. Stir them into the soup and cook for 2-3 minutes.

    Serve

    Pour the miso soup into bowls and serve hot.

Course 3: Grilled Mackerel

    Season the Fish

    Sprinkle salt on both sides of the mackerel fillet and let it sit for 15 minutes.

    Grill the Mackerel

    Preheat the grill. Grill the mackerel for about 5-7 minutes on each side until cooked through.

    Plate the grilled mackerel and garnish with lemon zest.

Course 4: Sushi

    Prepare Sushi Rice

    Rinse sushi rice under cold water until the water runs clear. Cook according to package instructions.

    Season the Rice

    Mix rice vinegar with the cooked rice and let it cool.

    Assemble Sushi

    Place nori sheets on a bamboo mat, spread sushi rice on top, and add cucumber sticks. Roll tightly and slice.

    Serve the sushi rolls with soy sauce for dipping.

Course 5: Tempura

    Prepare the Vegetables

    Peel sweet potato and cut it into thin slices. Prepare shrimp by removing the shell.

    Make Tempura Batter

    Mix tempura batter according to package instructions.

    Fry the Tempura

    Heat oil in a deep pan. Dip shrimp and sweet potato slices in batter and fry until golden brown.

    Plate the tempura and serve with dipping sauce.

Course 6: Beef Tataki

    Sear the Beef

    Heat sesame oil in a pan. Sear the beef tenderloin on all sides until browned but rare inside.

    Let the beef rest for a few minutes, then thinly slice it against the grain.

    Drizzle soy sauce over the beef and garnish with grated ginger.

Course 7: Seared Scallops

    Melt butter in a pan and add minced garlic. Sear scallops for about 2-3 minutes on each side until golden.

    Sprinkle parsley over the scallops and serve immediately.

Course 8: Pickled Vegetables

    Julienne the carrot and daikon radish.

    Combine rice vinegar and sugar in a bowl. Add vegetables and let them pickle for at least 30 minutes.

Course 9: Chawanmushi

    Prepare the Custard Mixture

    Whisk eggs and mix with dashi stock and soy sauce until well combined.

    Add Mushrooms

    Finely chop shiitake mushrooms and add to the egg mixture.

    Steam the Custard

    Pour the mixture into small cups and steam for about 15 minutes until set.

    Gently remove from steamer and serve warm.

Course 10: Matcha Dessert

    Prepare Matcha Mixture

    Whisk matcha powder with sugar and hot water until smooth.

    Combine with Milk

    Add milk to the matcha mixture and stir well.

    Serve with Whipped Cream

    Pour into serving bowls and top with whipped cream before serving.
