Course 1: Sashimi

Prepare the Fish
Thinly slice fresh tuna and salmon into sashimi pieces.

Arrange the sashimi on a plate, serve with a dab of wasabi and soy sauce on the side.
Course 2: Miso Soup

Make the Soup
In a pot, heat dashi stock until simmering. Add miso paste and whisk until dissolved.

Add Tofu and Green Onions
Dice tofu and thinly slice green onions. Stir them into the soup and cook for 2-3 minutes.

Pour the miso soup into bowls and serve hot.
Course 3: Grilled Mackerel

Season the Fish
Sprinkle salt on both sides of the mackerel fillet and let it sit for 15 minutes.

Plate the grilled mackerel and garnish with lemon zest.
Course 4: Sushi

Prepare Sushi Rice
Rinse sushi rice under cold water until the water runs clear. Cook according to package instructions.

Mix rice vinegar with the cooked rice and let it cool.

Place nori sheets on a bamboo mat, spread sushi rice on top, and add cucumber sticks. Roll tightly and slice.

Course 5: Tempura

Peel sweet potato and cut it into thin slices. Prepare shrimp by removing the shell.

Mix tempura batter according to package instructions.

Heat oil in a deep pan. Dip shrimp and sweet potato slices in batter and fry until golden brown.

Course 6: Beef Tataki
