Preparation of Ingredients

    Rinse Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

    Cook Sushi Rice

    Cook the rinsed sushi rice according to package instructions. Typically, this involves combining 1 cup of rice with 1 ¼ cups water in a pot, bringing it to a boil, then reducing to a simmer and covering until the water is absorbed (about 20 minutes).

    Prepare Avocado

    While the rice is cooking, slice the ripe avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it slightly with a fork, adding mirin for flavor.

    Prepare Scallops

    Thinly slice the Hokkaido scallops into bite-sized pieces. Optionally, marinate them in soy sauce for 10 minutes.

    Prepare Garnish

    Chop chives or green onions finely for garnish.

Assembly

    Shape Sushi Rice

    Once the sushi rice is cooked and slightly cooled, shape it into small oval mounds (gunkan) using wet hands to prevent sticking.

    Wrap with Nori

    Cut the nori sheets into strips (about 2 inches wide) and wrap them around the shaped sushi rice, securing the ends with a little water.

    Top with Avocado and Scallops

    Top each gunkan with a spoonful of mashed avocado followed by a few pieces of sliced scallops.

    Garnish

    Sprinkle sesame seeds and chopped chives on top for garnish.

    Serve immediately with soy sauce and wasabi on the side.
