    Make the Marinade

    In a bowl, combine soy sauce, mirin, sake, sugar, grated ginger, and minced garlic. Mix well until the sugar is dissolved.

    Marinate the Fish

    Place the Japanese mackerel fillets in a shallow dish and pour the marinade over them. Ensure the fish is well coated. Cover and refrigerate for at least 30 minutes, preferably 1-2 hours for deeper flavor.

Cooking

    Preheat the Grill or Broiler

    Preheat your grill or broiler to medium-high heat. If using a grill, lightly oil the grates to prevent sticking.

    Grill the Fish

    Remove the mackerel from the marinade and let any excess drip off. Place the fillets skin-side down on the grill or under the broiler. Grill for about 4-5 minutes on each side until the fish is cooked through and flakes easily with a fork.

Serving

    Plate and Garnish

    Once cooked, transfer the grilled mackerel to a serving platter. Sprinkle with chopped green onions and sesame seeds for garnish. Serve immediately.
