Preparation of Tuna

  1. 1

    Slice the Tuna

Using a sharp knife, slice the big eye tuna into thin sashimi pieces, approximately ¼ inch thick.

  2. 2

    Marinate the Tuna

In a bowl, combine soy sauce, sesame oil, and grated fresh ginger. Add the sliced tuna and let it marinate for about 10 minutes.

  3. 3

    Prepare the Green Onions

Finely chop the green onions and set them aside for garnish.

Cooking Sushi Rice

  1. 4

    Cook the Rice

Rinse 1 cup of sushi rice under cold water until the water runs clear. Cook according to the package instructions.

  2. 5

    Season the Rice

Once cooked, transfer the rice to a bowl. Mix in 1 tablespoon of rice vinegar while the rice is still warm. Let it cool to room temperature.

Serving

  1. 6

    Assemble the Dish

On a plate, arrange the marinated tuna slices, sprinkle with sea salt and garnish with chopped green onions.

  2. 7

    Serve with Accompaniments

Serve the tuna with nori sheets, pickled ginger, and wasabi on the side. Enjoy with sushi rice.
