    Clean the Madai

    Rinse the whole Madai under cold running water to remove any residual impurities. Pat dry with paper towels.

    Season with Salt

    Generously sprinkle sea salt all over the Madai, including the cavity. Let it sit for 15 minutes to allow the salt to penetrate.

Cooking

    Grill the Madai

    Preheat a grill to medium-high heat. Place the salted Madai on the grill and cook for about 6-8 minutes on each side, or until the fish is cooked through and the skin is crispy.

Serving

    Prepare the Garnish

    While the fish is cooking, prepare the garnish by arranging fresh shiso leaves, sliced radishes, and microgreens on a serving platter.

    Make the Dipping Sauce

    In a small bowl, combine soy sauce, rice vinegar, mirin, and grated ginger. Mix well and set aside.

    Serve the Madai

    Once the Madai is cooked, carefully place it on the platter with the garnish. Squeeze fresh lemon juice over the fish and serve with the dipping sauce.
