Fish Preparation
- 1
Clean the Fish
Rinse the whole Madai under cold water to remove any impurities. Pat dry with paper towels.
- 2
Season the Fish
Sprinkle the salt evenly over the outside and inside of the fish. Allow it to rest for about 15 minutes to absorb the flavor.
- 3
Prepare Marinade
In a small bowl, combine mirin and soy sauce to create a marinade for the fish.
- 4
Marinate the Fish
Brush the marinade over the fish, ensuring it gets into the cavity. Let it sit for another 10 minutes.
Cooking
- 5
Preheat the Grill
Preheat your grill or broiler to medium-high heat.
- 6
Grill the Fish
Place the marinated fish on the grill or broiler. Cook for about 6-8 minutes on each side, or until the skin is crispy and the flesh is opaque.
- 7
Check for Doneness
Ensure the fish is thoroughly cooked by checking that the flesh flakes easily with a fork.
Garnishing
- 8
Prepare Garnish
While the fish is cooking, slice the lemon and chop the cilantro and green onions.
- 9
Plate the Dish
Once cooked, transfer the grilled Madai to a serving platter. Garnish with lemon slices, chopped cilantro, and green onions.
