    Rinse the whole Madai under cold water to remove any impurities. Pat dry with paper towels.

    Sprinkle the salt evenly over the outside and inside of the fish. Allow it to rest for about 15 minutes to absorb the flavor.

    In a small bowl, combine mirin and soy sauce to create a marinade for the fish.

    Brush the marinade over the fish, ensuring it gets into the cavity. Let it sit for another 10 minutes.

    Preheat your grill or broiler to medium-high heat.

    Place the marinated fish on the grill or broiler. Cook for about 6-8 minutes on each side, or until the skin is crispy and the flesh is opaque.

    Ensure the fish is thoroughly cooked by checking that the flesh flakes easily with a fork.
